Taco Rice

Ingredients

  • Taco Seasoning - Recipe Doubled

  • 1 Large Onion - Diced

  • 500g Mince

  • 2 Tsp Garlic - Crushed

  • 350g Pasata

  • 1 Cup Long Grain Rice

  • 2.5 Cups Chicken Stock

  • Corriander

  • Grated Cheese

Directions

  1. Saute diced onion in oil in large frying pan until soft

  2. Add the garlic and cook for 2 minutes

  3. Add the mince and brown

  4. Add the pasata, taco seasoning, rice and chicken stock,

  5. Stir well, cover and simmer on a low heat for 15 to 20 minutes checking the rice isn't sticking to the bottom of the fry pan occassionally

  6. Add in the corriander and half the cheese. Stir until the cheese is melted. Add the rest of the cheese on top, and cover again until melted.

  7. Serve with corn chips, avocado and sour cream

Notes:

May need to add in more stock if it absorbs too quickly
